Easter is coming, Easter is coming! But, seriously, aside from Mother’s Day, this holiday sets the tone for marvelous brunches and that needs to be taken advantage of fully. I’ll tell you right now, this recipe is a stunner and can easily be shared between two people for a satisfying and wholesome meal that is high in protein and low in fat.

With St. Paddy’s day coming up, what better way to celebrate than with pizza? Wait, what? Okay, so maybe pizza isn’t a traditional Irish dish, but Colcannon is! I’ve taken the standard mashed version of Colcannon and changed it up a bit so that I could use it as a pizza topping. Boy, am I glad that I did, this pizza turned out delicious!

When I was a child, cream cheese was much like a food group for me. Every day, I would bring one or two of those creepy yet convenient packets of cream cheese with me and put it on just about any food item with glee. Luckily, for me, I grew out of that phase, but I definitely still have a soft spot for that creamy goodness of a spread. It’s exciting to see so many vegan cream cheese alternatives on the market.
