Colcannon Pizza: A Twist on the Classic Irish Staple


With St. Paddy’s day coming up, what better way to celebrate than with pizza? Wait, what? Okay, so maybe pizza isn’t a traditional Irish dish, but Colcannon is! I’ve taken the standard mashed version of Colcannon and changed it up a bit so that I could use it as a pizza topping. Boy, am I glad that I did, this pizza turned out delicious!

Recipe: Vegan Pizza Day is coming June 29!

It’s true that vegans love pizza as much as the next guy, and many of us eat it on a pretty regularly basis throughout the year. It’s only one day each year, though, that we band together to truly celebrate the wonders that are vegan pizza. That’s right, folks. Vegan Pizza Day is just around the corner, this Saturday, June 29.

Because it’s a special day, I came up with a special recipe to celebrate. This pizza combines sweet and savory for a refreshing take on our old favorite. Since we just welcomed the official beginning of summer, the flavors on this pie compliment the rising temps and don’t leave you feeling overstuffed or heavy. This pizza features the fresh crispness of apple, preserved by a short baking time, and the addition of fresh greens after baking helps make this pizza a light summertime treat. It’s a great addition to any pizza party you’re hosting or attending on Vegan Pizza Day!

Vegan Apple Spinach Pizza

Apple, Spinach, and Pecan Pizza

Pizza dough of your choice (I use ½ of this recipe for one pizza)
1 organic Fuji apple, sliced thinly
1 tsp dried thyme
1 cup shredded vegan mozzarella
1 Tbsp olive oil
2 tsp dijon mustard
2 tsp agave nectar
1-1 ½ cups baby spinach
¼ cup pecans, chopped

  1. Preheat oven to 400°F (205°C) and grease a pizza pan lightly with olive oil.
  2. Form dough in a round and lay in pizza pan.
  3. Top with apple slices in a single layer, then sprinkle on thyme and vegan mozzarella shreds.
  4. Bake 8-10 minutes until crust is baked through and cheese is melted.
  5. While pizza is baking, whisk together olive oil, mustard, and agave. Toss with spinach and set aside.
  6. Once the pizza is done, remove from the oven and top with the dressed spinach. Finish by sprinkling with pecans. Allow to cool for about 5 minutes before slicing and stuffing in your face.
