Peanut Butter Chocolate Chunk Oat Milk Ice Cream Recipe & Giveaway

This month, we’re over the moon about oat milk, and Pacific Foods has crafted an oat milk product with amazing flavor. Oat milk is high in fiber, protein, and is completely free of cholesterol and saturated fat. There are so many wonderful uses for oat milk: biscuits, pancakes, smoothies, oatmeal, sauces, and our favorite of all, ICE CREAM!

Our Snack Box Curator, Chris, picked up some Pacific Foods Oat Milk (you can find a special note from them inside your May Vegan Cuts Snack Box!) and created a sweet & creamy Peanut Butter Chocolate Chunk Ice Cream recipe for you to try and home and change your dessert world for the better.

Pacific Foods Oat Milk

PEANUT BUTTER CHOCOLATE CHUNK OAT MILK ICE CREAM

2 cups – Pacific Foods Brand Vanilla Oat Milk

2 cups – Coconut Cream

1 cup – Organic Sugar

1 tbsp – Cinnamon

1/2 tsp – Salt

16 oz – Dark Chocolate

2 heaping tbsp – Peanut Butter

  1. Add Pacific Foods oat milk, coconut cream, organic sugar, cinnamon and salt to a medium sauce pan and heat on low until the sugar is dissolved.
  2. Refrigerate the mixture for 30 minutes
  3. Break up pieces of your favorite (vegan) chocolate in small crumbles and add to the mixture
  4. Add two heaping tablespoons of peanut butter and stir
  5. Add the mixture to ice cream maker
  6. Let the ice cream maker churn for 30 mins until mixture is fully frozen
  7. Enjoy!

    Wow, I didn’t expect them to have so many foods! I’d love to try their Pablano Pepper & Corn Soup or their French Onion Soup. Their Hummus varieties look great, too. They even have a mac & cheese! And they have several kinds of Refried Beans & Baked Beans! Yum!

I feel like a lot of other non dairy milks have a strong flavor that comes through if you are trying to make something savory like a vegan alfredo sauce and it throws off the dish! this one is perfect!

      Make sure that is all you use it for to make Pho… I made a big mistake using it for regular soup … like how you use broth for “chicken” noodle or vegetable soup… or even Ramen noodle soup.. and it tasted horrible =( So the Pho base is specific for Pho . IN other words it isn’t good to use it as an alternative to veggie broth. no bueno but that is my opinion.

    We love all of the vegan Pacific foods that we’re able to find here. The cranberry sauce was great at Thanksgiving, but we like it all year round in our steel cut oats. Also love the vegetable stock, the roasted red pepper hummus, and the almond milk. We got the oat milk in our Vegan Cuts May box, but haven’t used it yet. This recipe looks perfect!
